Provide for all medical/personal chemical items(creams, lotions, body sprays hand sanitizer etc.) to be stored just like chemical and completely separate from food items. Immediate/Onsite
21  Observed the following wiping cloth(s) to be improperly stored: 1) wiping cloth on shelf below steam table in cook line, 2) Wiping cloth on counters, 3) Wiping cloth left in the walk-in cooler. Provide for all wiping clothes to be stored in a sanitizer bucket when not in use or if dirty to be placed in the laundry bag. Immediate/Onsite
22  Observed the following food contact surfaces to be unclean: Wrapping for bacon stored in cooler drawer in cook line was flipped so that it would rub the outside of the drawer when it was open and closed, 2) dirty equipment piece to the mixer was left in prep area, 3) Shelves in the 2-door warmer by walk-in cooler door had food debris. Remove the extra bacon wrapping to keep the drawer clean. Clean and maintain Next Inspection
